Today is Monday and we consider it as the start of the week for our operation. However, it became terribly busy during lunch. Usually Mondays are bum days. But today is different. Maybe it’s also because of the pay-day week.
During the briefing we kind of got scolded by our assistant manager. I really don’t know the whole story but Ate Aisa told me what happened while we were walking home.
It was very busy yesterday and Hady was the drinks runner. So maybe, Hady informed the managers that the service staff should put wine buckets in tables that have wine bottle orders. Since it was busy yesterday, Ate Aisa wasn’t able to put a wine bucket in the table. Maybe, Hady’s mood just turned around and that’s history.
Another thing discussed during the briefing is about when the section A and B got no staff to attend to. Loy Fatt said that the section A and B is always weak. Uncle Robert and Uncle Kok Wu are always there and usually one junior to help them. So there was only three staff to attend to the members in all. But the thing is, the drinks area is there so the drinks runner needed to help the service team when they are free. As for the Sections C and D, it’s farther from the kitchen. Considering that, it will be much difficult for the staff to transfer the soiled plates from the section to the stewarding and it will take some time. While one junior is doing the clearing and picking up desserts another junior should help in the service. In addition to that, Section CD is bigger and the turn-over rate is higher. That’s how the sections are plan in my point of view. But I think that there should be a rotation in section designation so that staff will be familiar with both sections. I like it better in Section CD because I have food there every day because of Yuki. AB is kind of troublesome because it’s hard to communicate with Uncle Robert.
